Chia Seed Pudding Recipe
Chia seeds are so packed with important nutrients and they have so many health benefits. They are full of omega-3 fatty acids, they are rich in antioxidants, and they pack a great fiber, iron, and calcium punch. These nutrient dense seeds have been associated with a reduced risk of many adverse health conditions, including obesity, diabetes, heart disease, and overall mortality.
Here is an easy recipe that I love to make! You can add all sorts of low carb goodies to make it a delicious treat or meal!
Chia Seed Pudding
Ingredients:
3 Tbsp chia seeds
1 cup unsweetened almond or coconut milk
½ Tbsp keto-friendly sweetener of choice, such as Swerve or Lakanto syrup
¼ tsp vanilla extract
Optional toppings: berries, seeds, nuts, nut butter, cacao powder, or keto granola
Directions:
Stir together the ingredients in a mason jar or airtight container. Let sit for 5 minutes, then stir again. Cover and put in the refrigerator to set for 1-2 hours or overnight.
Once set, if the mixture is too thick, add a little more unsweetened almond or coconut milk. If too thin, add ½-1 Tbsp chia seeds.
Top with optional toppings listed above. Enjoy! The pudding can be stored for 5 days in an airtight container in the refrigerator.
