For as long as I can remember French toast has always been my favorite breakfast. When I started my Keto journey back in 2017, I kissed all of my hopes and dreams of ever having French toast again good bye. UNTIL, this came into my life. This literally tastes exactly like the eggy bread and cinnamony delciousness I've always enjoyed.
This recipe makes a nice sized casserole with plenty of portions to last for days. I love adding this recipe to my meal plans for my clients, challenge participants and their families to enjoy! After all sharing is caring! ;)

French Toast Bake Serves 6
8 Tbsp butter
8 oz cream cheese
½ cup powdered keto-friendly sweetener, such as Swerve or Lakanto brand
¼ tsp cinnamon
¼ tsp vanilla extract
Optional toppings: Keto-friendly maple syrup, jam, powdered sweetener, and/or berries
Preheat the oven to 350 degrees. Spray a 7 x 11-inch baking pan with cooking spray.
Combine the eggs, butter, cream cheese, sweetener, cinnamon, and vanilla extract, and mix using a hand mixer or blend on high in the blender.
Pour the mixture into the pan.
Bake for 40 minutes, until golden brown on top. Store in an airtight container in the refrigerator for up to 5 days.
