Keto Salted Caramel Chocolate Mufkies (muffin cookies)

What do you get when you combine a muffin and a cookie? A mufkie! ;) This is a super simple and delicious recipe.


2 cups almond flour

1 teaspoon baking powder

1 cup granulated Swerve

2 tablespoons cacao powder

2 large eggs

1/2 cup melted butter

2 teaspoons sugar free salted caramel syrup (Jordans Skinny Syrup is yummy)

1/2 cup Lilys salted caramel chocolate chips

  1. Preheat the oven to 350 degrees. Line a muffin pan with liners or silicone muffin molds.

  2. In a large bowl combine the almond flour, cacao powder, and baking powder. In a separate bowl mix the sweetener, eggs, sugar free syrup and melted butter.

  3. Stir the wet ingredients into the dry ingredients. Mix well then add chocolate chips.

  4. Transfer the batter to the muffin tin and bake for 20-25 minutes.

I drizzled melted 85% dark chocolate on top once they cooled.
